Op het zakje staat iets als \u00e9\u00e9n verpakking voor twintig tot dertig liter. Dat gaat meestal goed, maar een berekening is het niet. De vergistingstemperatuur, de zwaarte van het wort, de leeftijd van de gist en de stam zelf maken allemaal verschil. En daar blijft het niet bij: waar komt het eind-SG uit, hoe lang duurt de vergisting, en welke gist past eigenlijk het best bij het bier dat je wilt brouwen?<\/p>\n\n<p>Voor al die vragen is er de Korrelgistcalculator van Hobbybrouwen.nl. Hij werkt in elke browser, op de computer en op de telefoon, en je kunt hem ook als app op je telefoon zetten:<\/p>\n\n<p class=\"ehb-link\"><a href=\"https:\/\/www.hobbybrouwen.nl\/gistcalc\/nl\/\" target=\"_blank\" rel=\"noopener\">www.hobbybrouwen.nl\/gistcalc\/nl<\/a><\/p>\n\n<p>Probeer hem eens bij je volgende brouwsel. Je hebt er geen brouwsoftware voor nodig, en binnen een paar minuten weet je meer over je vergisting dan je van het zakje kunt aflezen.<\/p>\n\n<h3>Meer dan een rekensom<\/h3>\n\n<p>De meeste gistcalculators vertellen je hoeveel gram je moet enten, en daar houdt het op. Deze calculator begint eerder en gaat verder. Hij helpt je een gist kiezen, rekent met je hele brouwsel en laat zien wat je keuzes betekenen voor het eind-SG, de vergistingstijd en de smaak. Wat hem anders maakt:<\/p>\n\n<ul>\n<li>Alle 123 korrelgisten uit het <a href=\"https:\/\/www.hobbybrouwen.nl\/site\/brouwencyclopedie\/overzicht-korrelgisten\/\" target=\"_blank\" rel=\"noopener\">overzicht korrelgisten<\/a> zijn doorzoekbaar op bierstijl, smaak en eigenschappen. De smaakomschrijvingen en de vermelding of een gist fenolisch (POF) of diastatisch (STA1) is, zijn nagelopen aan de hand van de opgaven van de fabrikanten en wetenschappelijk onderzoek.<\/li>\n<li>Hij rekent het eind-SG uit met je stort, je maischschema, suiker en koudhoppen, en niet alleen met de vergistingsgraad van de gist.<\/li>\n<li>Hij geeft een schatting van de vergistingstijd: de aanloopfase, de hoofdgisting en wanneer het bier uitgegist is. Voor zover bekend doet geen andere calculator dat.<\/li>\n<li>Hij waarschuwt waar het mis kan gaan: buiten het temperatuurbereik van de gist, tegen de alcoholtolerantie aan, een verhoogd risico op diacetyl of slecht schuim, of een gist die in de fles kan doorvergisten.<\/li>\n<li>Hij zegt eerlijk hoe zeker hij is. Bij elke uitkomst staat waarop die berust.<\/li>\n<li>Hij leert van de brouwers die hem gebruiken. Daarover gaat het tweede deel van dit artikel.<\/li>\n<\/ul>\n\n<h4>Een gist kiezen<\/h4>\n\n<p>Je wilt een saison met een peperig karakter, of een NEIPA waarin de hop zo veel mogelijk naar voren komt. Typ dan in het zoekveld bij De gist wat je zoekt. Je kunt woorden combineren: <em>saison<\/em> geeft negen gisten, <em>saison peper<\/em> nog zes. Ook eigenschappen zijn doorzoekbaar, zoals <em>diastaticus<\/em>, <em>pof<\/em>, <em>ondergist<\/em> of <em>biotransformatie<\/em> voor gisten die hoparoma's versterken. Een paar zoekvoorbeelden, met het overzicht korrelgisten van 18 oktober 2026.<\/p>\n<\/div>\n\n<p>Het mooiste is dat je gisten zo in jouw situatie vergelijkt, en niet in het standaardwort van de fabrikant. Vul eerst je brouwsel in en klik dan de gevonden gisten een voor een aan. Je ziet meteen hoeveel gram je nodig hebt, waar het eind-SG uitkomt, hoe lang de vergisting duurt en welke smaak je mag verwachten.<\/p>\n\n<h4>Wat je brouwproces met je bier doet<\/h4>\n\n<p>Omdat de calculator het eind-SG uit je maischschema en je stort berekent, kun je ermee spelen voordat je gaat brouwen. Neem twintig liter wort van 1,048 met SafAle US-05. Bij een rust van zestig minuten op 65 \u00b0C komt het eind-SG uit op 1,009. Op 72 \u00b0C wordt dat 1,017: acht punten hoger en een voller bier, met een procent minder alcohol. Met de saisongist SafAle BE-134 levert dezelfde stap maar drie punten op, van 1,005 naar 1,008. Die gist is diastatisch: hij draagt het STA1-gen en breekt de dextrines die een hogere maischtemperatuur oplevert grotendeels zelf af.<\/p>\n\n<p>Recent onderzoek maakt dat beeld preciezer. Of een gist met het STA1-gen werkelijk een supervergister is, hangt af van de promotor, het stuk erfelijk materiaal dat het gen aanzet. Ontbreekt een deel daarvan, dan wordt het gen meer dan honderd keer zwakker afgelezen<sup><a href=\"#ehb-bron-4\">[4]<\/a><\/sup>. Volgens het overzicht geldt dat voor SafAle WB-06, en de calculator rekent die gist daarom als gewone gist. Bij een sterk diastatische gist waarschuwt hij wel: zo'n gist kan na het bottelen doorvergisten, waardoor de koolzuurdruk in fles of vat veel hoger uitvalt dan je berekend hebt.<\/p>\n\n<p>Ook de kleur van je caramout telt nu mee: lichte caramout vergist beter dan donkere. En hop je koud, dan vraagt de calculator wanneer en hoeveel. Hop bevat enzymen die dextrines afbreken, waarna de gist die suikers alsnog vergist. Dat heet hop creep. In een onderzoek met tien gram Cascade per liter zakte het extract daardoor in veertig dagen nog ongeveer 2 \u00b0P<sup><a href=\"#ehb-bron-5\">[5]<\/a><\/sup>. De calculator houdt rekening met een lager eind-SG en waarschuwt voor nagisting als je na de hoofdgisting hopt.<\/p>\n\n<h3>Hoe de calculator rekent<\/h3>\n\n<p>Alles staat uitgeschreven op de pagina <a href=\"https:\/\/www.hobbybrouwen.nl\/gistcalc\/nl\/achtergronden.html\" target=\"_blank\" rel=\"noopener\">Achtergronden en aannames<\/a>, met formules, tabellen en ruim vijftig bronnen. In het kort:<\/p>\n\n<p>De hoeveelheid gist volgt de entniveaus die professionele brouwers gebruiken, in levende cellen per milliliter per graad Plato. Voor een bovengist komt het standaardniveau neer op 0,075 gram per liter per graad Plato, voor een ondergist op 0,125 gram. Twintig liter van 12 \u00b0P met US-05 vraagt zo 18 gram. De calculator corrigeert daarop voor het celaantal per gram, de leeftijd van de gist en de temperatuur: vergist je kouder, dan groeit de gist trager en is er meer nodig. Dit is het best onderbouwde deel van de berekening.<\/p>\n\n<p>Het eind-SG begint bij de vergistingsgraad die de fabrikant opgeeft, gemeten in een gestandaardiseerd wort. Daarna rekent de calculator uit hoeveel jouw wort daarvan afwijkt. De maischtemperatuur weegt het zwaarst: de vergistbaarheid is het hoogst rond 65 \u00b0C, omdat \u03b2-amylase daarboven snel uitvalt<sup><a href=\"#ehb-bron-3\">[3]<\/a><\/sup>. Caramout, donkere mout en suiker krijgen elk een eigen vergistbaarheid, en de alcoholtolerantie schuift mee met gistvoeding, beluchting en enthoeveelheid. Reken op twee tot drie SG-punten onzekerheid.<\/p>\n\n<p>De vergistingstijd is het meest een schatting. Verbelen en collega's lieten zien dat twee keer zoveel gist enten de vergisting niet twee keer zo snel maakt, maar ongeveer een derde sneller<sup><a href=\"#ehb-bron-1\">[1]<\/a><\/sup>. De gist vermeerdert zich na het enten immers nog een paar keer. Op dat verband is de tijdformule geijkt. Maar onder precies dezelfde omstandigheden zat tussen de snelste en de traagste gist een factor 2,25<sup><a href=\"#ehb-bron-2\">[2]<\/a><\/sup>. Voor elk staat in de <a href=\"https:\/\/www.hobbybrouwen.nl\/gistcalc\/nl\/handleiding.html\" target=\"_blank\" rel=\"noopener\">praktische handleiding<\/a> stap voor stap uitgelegd hoe het werkt, met schermafbeeldingen.<\/p>\n\n<p>De calculator werkt helemaal op zichzelf, maar is ook gemaakt om naast je brouwprogramma te gebruiken. Een recept uit Brewfather, Grainfather, BrouwVisie of een ander programma lees je in een paar tikken in. De calculator laat zien wat hij heeft overgenomen, loopt met je langs wat je nog moet controleren, en zet zijn uitkomsten naast die van je programma. Er wordt niets op de server bewaard: je berekening sla je zelf op als klein bestand, en voor de brouwruimte druk je hem af als brouwkaart van \u00e9\u00e9n A4. Op je telefoon zet je de calculator als app op het beginscherm, en daarna werkt hij ook in een kelder zonder bereik.<\/p>\n\n<h3>Waarom jouw vergisting telt<\/h3>\n\n<p>Hier wordt de calculator pas echt bijzonder. Over korrelgist in hobbywort bestaan nauwelijks metingen: de literatuur gaat vooral over vloeibare gist in industri\u00eble gistvaten, en de fabrikanten meten in \u00e9\u00e9n standaardwort bij \u00e9\u00e9n temperatuur. Twee gisten kunnen op hetzelfde eind-SG uitkomen en toch een heel ander verloop hebben.<\/figcaption>\n<\/figure>\n\n<p>Eerst past de gist zich aan en verandert de dichtheid nauwelijks. Dan volgt de hoofdgisting, waarin het grootste deel van de suikers in korte tijd wordt omgezet. Tot slot vlakt de curve af. Hoe lang elk deel duurt, verschilt per stam, en voor de meeste korrelgisten is dat nooit gemeten. Elk brouwsel dat met de calculator wordt gedeeld, levert dus gegevens op die nergens anders bestaan: een curve met daarbij de stam, de ge\u00ebnte hoeveelheid, de temperatuur, de stort, het maischschema en een met de hand gemeten eind-SG.<\/p>\n\n<p>De calculator maakt daar meteen getallen van. Lees bij stap 2 het meterbestand van je iSpindel, RAPT Pill, Tilt of Brewfather in, als CSV of als Excel-bestand. De calculator legt er een S-curve door, het logistische model dat ook in de brouwwetenschap wordt gebruikt<sup><a href=\"#ehb-bron-6\">[6]<\/a><\/sup>, en haalt daaruit de aanloopfase, de hoofdgisting en wanneer het bier uitgegist was. Die zie je naast wat het model verwachtte, en ze gaan mee in je forumbericht. Met dertig tot vijftig van zulke berichten wordt de snelheid per gist voor het eerst echt te onderbouwen, gebaseerd op wat hobbybrouwers werkelijk meten. Een begin- en eind-SG met de hand gemeten, plus het aantal grammen dat je ge\u00ebnt hebt, is al genoeg om het eind-SG te toetsen. Na hoeveel dagen het bier uitgegist was, zegt iets over de vergistingstijd. Drie tot vijf handmetingen tijdens de hoofdgisting zijn nog mooier: die vul je in een tabelletje in, en de calculator rekent ook daar de curve van door. Heeft je grafiek gaten omdat de verbinding even wegviel, deel hem toch. Het enige wat telt, is dat je eerlijk aangeeft hoe je gemeten hebt. Ontbrekende gegevens maken een meting niet onbruikbaar, verkeerde wel.<\/p>\n\n<h3>Zo deel je je vergisting<\/h3>\n\n<ol>\n<li>Reken je brouwsel vooraf door, zoals je het werkelijk gaat brouwen, en sla de berekening op met XML opslaan bij stap 1.<\/li>\n<li>Brouw, ent en vergist je bier, en volg het verloop met je meter of met een paar handmetingen.<\/li>\n<li>Wacht tot de vergisting is afgerond: twee gelijke metingen met twee dagen ertussen. Meet het eind-SG dan met de hand, ook als je een elektronische meter hebt.<\/li>\n<li>Laad het calculatorbestand bij stap 2 weer in, lees eventueel je meterbestand in en vul je metingen aan.<\/li>\n<li>Klik op Forumbericht met metingen. Ontbreekt er nog iets, dan zegt de calculator wat en springt hij naar het veld. Is alles compleet, klik dan op Kopi\u00ebren en naar het metingentopic, en plak het bericht in het topic <a href=\"https:\/\/www.hobbybrouwen.nl\/forum\/index.php\/topic,48743.0.html\" target=\"_blank\" rel=\"noopener\">Metingen Korrelgistcalculator<\/a>.<\/li>\n<\/ol>\n\n<p>Heb je al gebrouwen zonder vooraf te rekenen? Dan is je meting net zo welkom. Vul je brouwsel na de vergisting met de hand in, of lees het exportbestand van je brouwsoftware in bij stap 2. Elke gedeelde vergisting helpt alle brouwers. Hoe meer verlopen er binnenkomen, van zoveel mogelijk verschillende gisten, bieren en brouwers, hoe beter de calculator voorspelt hoe lang een vergisting duurt en waar het eind-SG uitkomt. Daar heeft iedereen profijt van, ook wie zelf (nog) niet meet. Gebruik de calculator dus bij je volgende brouwsel, kijk welke gist het best bij je recept past, en deel daarna wat je gemeten hebt.<\/p>\n\n<p>Vragen, kritiek en idee\u00ebn zijn net zo welkom als metingen.
