Blonde als Leffe

Hi  :)

I'm planning brew a blond like Leffe, not necessary clone...
my batch will be 60L and I would like make a test: 30L fermenting with WB06 and 30L withT58...
I don't know T58 so good, if possible use this yeast for a blond?

The recipe:
Bitterness: 23,7 IBU
Est Color: 7,5 SRM
Brewhouse Efficiency: 75,00
Volume: 63L

10,0 kg Pilsen 61,73 %
2,70 kg Wheat Malt, 16,67 %
1,30 kg Carared (Weyermann) (22,8 SRM) Grain 8,02 %
0,70 kg Melanoidin (Weyermann) (35,5 SRM) Grain 4,32 %
1,50 kg Corn Syrup (1,0 SRM) Sugar 9,26 %

60,00 gm Northern Brewer [8,50 %] (60 min) Hops 17,8 IBU
70,00 gm Saaz [4,00 %] (20 min) Hops 5,9 IBU

33,29 gm Gypsum (Calcium Sulfate) (Mash 60,0 min) Misc

T58 is low attenuation yeast: leaves lots of sugars unfermented. If you like sweet beer like Leffe: ok. But why not use a saison yeast (Belle Saison) and make a farmhouse blonde?

Research done here on the forum in the past has shown that Leffe Blond is mostly a strong Kristall Weizen. WY3068 would be an appropriate yeast,

I Don't have access to liquid yeast...

No necessary must be Leffe clone...
Because this I'll use wb06 and T58...

30L with wb06
30L with belle saison

I think will be good beers

Well the Belle Saison will be a .................. Saison and not a Leffe Blond

You're using about 10% off sugar ( candy-sirup ) in your recipe the T58 would reach a attenuation above 80%

Below 20 C will get a spice finish
Above 20 C will get a sweet bubblegum finish

I made hl's off beer with the T58 and every time I had 10% or more sugar in my recipes attenuation went above 80%
No sugar in the recipe never went higher then 78% mostly around 74/75%

I would prefer the T58 instead off the belle saison unless you want to brew a Saison

If the logo's right, he lives in Brasil. A saison can easily cope with temperatures above 25°, that's why i recommended this yeast (unless he has temp.control).
I think it's a good idea comparing two yeasts and let the tasting of the beer decide which one he prefers.
