The Chimay will definately work! What is the "best before" date on the bottle?Give it time and be patient. You might have to wait more than a week if the bottle is older. The erdinger might grow too, but people think it is just a botteling-yeast. Not the yeast used for the main fermentation.
I would like to produce a wheat beerand I thought of reviving the Erdinger yeastbut there are other better for this type of beer?

When you put applejuice in the beer-bottle, you need to left the substance in this beerbottle.You are taking unnessesary risk of infection to put the yeast and the juice in the great bottle at this stage.The beer bottle is sterile from the inside, otherwise the beer was already screwed up.Erdinger is an German beer by the way.
Christoffel is also possible to cultivate, however keep in mind that this is a Lager yeast.When fermenting with this yeast you need to keep the wort/beer cool (10-12 ºC).
